ORIGIN

Blended from Chardonnay, for the finesse and elegance of its bouquet; Pinot Noir, for its structure and aromas of red berries; and Petite Arvine, for its vibrancy and originality.

 

PRODUCTION

Hand-harvested into small crates, followed by gentle pressing (maximum 1.2 bar) of whole bunches. The pressed juice is separated to retain only the heart of the must, which offers the most delicate aromas and the most elegant acidity. Alcoholic fermentation of the free-run wine in truncated-cone oak vats. Partial malolactic fermentation depending on the grape variety and vintage. Racking and second fermentation in bottle using the traditional method. Aged on lees for a minimum of 44 months. Dosage of 1g/litre at disgorgement.


DEVELOPMENT

The three blended grape varieties offer good ageing potential, particularly after the second fermentation. Once disgorged, the wine will reach its peak after 3 to 4 years in bottle. Thanks to its four years of ageing on lees, this Brut has a fine, creamy mousse.
