Creating a balanced ecosystem
Moving away from viticulture as a monoculture
We aim to develop sustainable agriculture through a balanced ecosystem. As a result, we have around twenty fruit trees that provide us with a variety of fruits throughout the seasons: pears, quinces, cherries, figs, plums, peaches and apricots. We have also installed an insect hotel and replanted native shrubs to combat erosion. The stones that were moved have been piled together to create a rockery to provide shelter for lizards during the winter

Organic farming
For the past few years, all our treatments have been carried out in accordance with organic farming practices. We no longer use pesticides or herbicides. Synthetic chemicals are banned. We aim to allow our vines to find a natural balance. To this end, we provide them with the natural fertilisers they need.



Natural amendments
In fact, after the harvest, we spread compost on every other row (alternating from one year to the next). This provides the vines with organic matter. The compost applied in late spring also acts as a ‘mulch’. It helps retain soil moisture, which is essential in a climate as dry and sunny as that of the hillsides of central Valais.
The other row is sown with green manure or a mixture of native seeds. White grape varieties require a higher nitrogen content in the must to develop their aromatic potential. Consequently, we sow ‘red’ clover. For red grape varieties, we sow a mixture of native seeds developed in collaboration with the State of Valais to cover the ground and prevent weeds or other unwanted plants from growing. These would compete with our vines by taking their precious water and nutrients. The seeds planted, such as fescue and roof brome, have a different growth cycle to the vines.
All our ‘waste’ is also put to good use, as the prunings are shredded and spread between the vine rows. We also spread the grape marc once fermentation is complete.
